Spice Rubbed Salmon Recipe


I served this dinner yesterday with garlic parsley red potatoes and some lemon wedges. I got this recipe from the The Best of Cooking Light. I made some changes to the amounts of sugar and chili. It was a super easy quick dinner.

Ingredients:
Serves 2

2 Salmon fillets
1 tsp brown sugar
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp ground cumin
1/4 tsp chili powder
1/2 tsp paprika
1/4 tsp salt
1/8 tsp dried thyme
cooking spray

Directions:

Preheat Broiler.
Combine all spices and rub evenly on the salmon fillets.
Place fish on a pan coated with cooking spray.
Place the rack in the middle position and cook for 7 mins on each side or until reaches desired degree of doneness.


In the original recipe , they served the dish with mashed potatoes. I served it with garlic and parsley red potatoes.

Bring a pot of water to boil, drop 8 potatoes that were cut in half. Cook for 20 min or until tender.
Prepare dressing by mixing 2 tbs olive oil , 1 tsp lemon juice, 2 garlic cloves minced, 1 tsp dried parsley, salt and pepper to taste.
When potatoes are cooking,mix with dressing until well combined.
