Shrimp Primavera Recipe



Ingredients:

Serves 2

1/4 lb penne pasta
1/4 uncooked deveined and shelled shrimps
1/4 cup ( 2 oz) mushrooms
1/4 cup thin strips red pepper
1/4 cup thin strips  yellow pepper
2 tbs diced onions
2 tbs olive oil
1 tsp minced garlic
8 oz crushed tomatoes
2 tbs butter
1 tbs flour ( if you don't like your sauce to be thick , skip the flour and add few tbs of water)
3 tbs heavy whipping cream
3 tbs sherry or apple cider
1 tbs seafood cocktail sauce
1 tsp lemon juice
1/4 tsp salt
1/8 tsp black pepper
2 pinches red pepper flakes
1/4 tsp basil
pinch of thyme

Directions:

Bring a pot of salted water to boil, add few drops of oil and drop pasta. Cook until it reaches desired tenderness.
In a sauce pan, over medium heat melt butter.
Saute garlic for 1 min.
Add flour and stir for 1 min.
Add crushed tomatoes , salt , black pepper, thyme,basil , red pepper flakes, heavy cream, sherry,lemon juice and cocktail sauce.
Stir ,cover and simmer 5 mins
In a large skillet, over medium high heat, heat olive oil and saute onions, peppers and mushrooms for about 3 mins.
Add shrimps and the sauce , cover and simmer for 5- 7 mins or until shrimps are cooked.
Add pasta to the shrimp and sauce and toss.
Serve while hot.
